2. Cut out cookies using the leaf cookie cutter and place them 1 inch apart on the baking sheets. Sprinkle with sanding sugar .
3. Freeze the cookies for 10 minutes.
4. Bake until the cookies are firm to the touch but not browned on the edges, 10 to 12 minutes.
5. Let cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
